Job Summary (Line Cook: Full Time, Seasonal)
- The Line Cook (grill, saute, and/or fry station) is an important team player, responsible for preparing all menu items in an efficient manner while maintaining quality, cleanliness standards and effective communication
- This is a seasonal position running mid-April through mid-October, based on the busyness of the cruise ship season
- Possible opportunity to arrive earlier and/or stay later
- Resume and 3 professional references required at application
- Prep and maintain a stocked station
- Prepare each dish on our menu using our proven recipes
- Memorize and employ our serving portion sizes and all basic meal prep procedures
- Maintain and follow proper food handling, safety and sanitation procedures – all phases of food production and service including storage, rotation, preparation, recipe adherence, cooking methods, plate presentation, quality, service and production time adherence
- Evaluate finished products for appearance, taste, smell and texture according to internal specifications
- Work with team of cooks to do portion prep work for other shifts when needed
- Performs shift opening and closing duties as assigned, including cleaning cutting boards, fryers, grills, equipment and floors
- Maintain cleanliness and organization of kitchen, cooking areas, individual station, kitchen equipment and food storage areas, reporting any kitchen equipment or maintenance issues to the manager on duty
- Follow safety guidelines and use caution in proper lifting techniques, handling knives and operating machinery
- Ability to work with a team in a fast-paced kitchen environment
- Efficiently communicate with all staff clearly and respectfully
- 3+ years experience in cooking in a high-volume, fast-paced establishment preferred
- Knowledge of cooking procedures, kitchen equipment and safety rules for kitchen and equipment
- Flexible and adaptable to quickly changing demands
- Ability to work on your feet for eight hours or more a day & lift large boxes weighing 50+ lbs

That’s the motto for the hard-working crew that makes Skagway Brewing Company what it is. Serving hand-crafted ales and great pub food, the Skagway Brewing Company is a fast-paced, high-volume establishment located in the Alaskan cruise ship port of Skagway.
As mentioned above, we take pride in our sustainability efforts from our indoor aeroponic farm, capturing and reutilizing the carbon dioxide from brewing elsewhere, to processing our spent fryer oil to create our own biodiesel that is then used to heat the building as well as fuel the brewing process. This is temporarily on pause, but we plan to resume in the near future.
As an Alaskan Cruise Ship Port, our business is heavily influenced by seasonal tourism. May-October our tiny boardwalk town is overflowing with tourists. Our off-season crew is comprised of year-round locals, but we rely immensely on our “seasonal individuals” -- those drawn to the allure of Skagway, its history, and an Alaskan adventure in The Last Frontier.
