 Job Description 

Responsible for hand-cutting legendary steaks on a daily basis.

Job Tasks:

Declaration(s) of essential functions.

• Cuts fresh hand-cut steaks daily.

• Follow the dimension guidelines set by TRH.

• Achieves and maintains adequate yields.

• Directly responsible for the cost of food.

• Responsible for the safety and sanitation of the meat room.

• Participation in the HERO awards program.

• Participates in daily fillet audits.

• Controls all proteins and weighs boxes.

• Sanitation and dismantling of all equipment in the meat room.

• Proper understanding of daily prep sheets and par levels.

• Proper understanding of HRT shelf life. It uses FIFO rotation.

• Ability to correctly cheat the elements.

• Able to work in extreme cold.

• Quality, speed and performance are the key objective of this work.

• Install meat display cases daily.

• Performs lateral work tasks of opening and closing.

• Maintains adequate uniform and hygiene standards at all times.

• The ability to have fun at work.
