Position Summary 

Prepare and / or directs the preparation of food to be served complying with all applicable sanitation, health, and personal hygiene standards and following established food production programs and procedures. Ensure appropriate use of facility supplies and equipment to minimize loss, waste, and fraud.

Essential Duties and Responsibilities 

The essential functions include, but are not limited to the following:
·         Makes periodic and regular inspections of units to observe quality of food preparation and service, food appearance and cleanliness and sanitation of production and service areas, equipment and employee appearance. 

·         Coordinates all training activities for kitchen, bakery, butcher shop and other production and service employees to include the identification and analysis of training needs and the design and implementation of programs to address these deficiencies.

·         Develops recipes and portion specifications in accordance with consumer tastes, nutritional needs, product specifications, ease of preparation and established procedures and budgetary constraints. 

·         Participates in other menu planning activities to include the determination of purchasing specifications, product and recipe testing and menu development. 

·         Assists operation managers as requested in areas such as plate presentation, special function menu planning and the design of new service areas.

·         Prepares operational reports and analysis setting forth progress, adverse trends and make appropriate recommendations.

·         Performs other work related duties as assigned

Minimum Qualifications (Education, Experience, Skills) 

·         Bachelor’s degree with major concentration in food preparation, management, nutrition or work related field.

·         Position requires 4 (four) or more years progressive work experience in a high volume food production or catering organization. Equivalent combination of education and/or experience considered.

·         Moderate reading and writing skills; proficient interpersonal relations and communicative skills; ability to stand, reach, lift, bend, kneel, stoop, climb, push and pull items weighing up to 50 pounds; manual dexterity; auditory and visual skills; ability to follow written and oral instructions and procedures.

·          Knowledge of Excel word, pdf’s, hot schedules and e-save are a plus. 

Physical Demands and Work Environment 

The work that Executive Chefs do is both physically and mentally demanding.They support the Mission, Values and Vision of the restaurant and the facility. They support, cooperate with, and implement specific procedures and programs for:  Safety, including universal precautions and safe work practices, established fire/safety/disaster plans, risk management, and security, report and/or correct unsafe working conditions, equipment repair and maintenance needs. They must maintain the confidentiality of all data, including employee and operations data. They are responsible for Quality Assurance and compliance with all regulatory requirements. Executive Chefs must remain compliant with current law and policy to provide a work environment free from sexual harassment and all illegal and discriminatory behavior.

While performing their duties they must supports and participate in common teamwork including working together with all co-workers; planning and completing job duties with minimal supervisory direction, including appropriate judgment. They use tactful, appropriate communications in sensitive and emotional situations. 

They must complete requirements for in-service training, acceptable attendance, uniform and dress codes including personal hygiene, and other work duties as assigned. The incumbent must maintain skills necessary to safely and efficiently operate the following equipment and machines used in the performance of this job including but not limited to: Kitchen equipment, i.e., oven, stove, dishwasher, slicer, coffee machine, steamer, mixer, and chef's knives.

Compensation: $75,000.00 - $85,000.00 per year
