The Culinary Manager will engage with all levels, inspire teams, and promote results by fostering a collaborative partnership between our culinary department and pub operations. The position will focus on the following primary areas of responsibility: Process Definition, Coaching & Training, Data Support, and Creative Development.
- Own the standards and best practice definitions for the kitchen by optimizing kitchen design, equipment, smallwares and packages
- Establish clear best practices and guides for inventory receipt, product lifecycle, prep, build and plating process
- Focus on the following goals for all process definitions: Efficiency, Safety, Sanitation, Gross Margin, and Food Quality & Presentation
- Maintain an accurate definition of all theoretical COGS by menu items
- Collaborate with Director of Training to roll out training materials and guidelines
- Conduct store support visits to provide coaching and re-setting when necessary
- Assess and build our team culture to inspire and develop leaders
- Support the ecosystem with data management and cleanup for all food inventory items and builds in Meez and Restaurant 365
- Drive continuous improvement with our food quality and presentation under V.P. of Retail and the Culinary Development team
- Refine existing recipes / builds to ensure alignment with our vision and program goals
- Develop new recipes for the pizza pubs via seasonal offerings, ongoing menu refreshes, and special events
- Minimum of 4 years of documented success as a chef in a high volume, scratch kitchen
- Extensive baking knowledge with a focus on pizza dough and bread
- Mastery and comfort with pub economics: COGS, theoretical COGS, labor, and Income Statements
- Experience developing recipes from ground up, including creative definition, sourcing, yield assessment, prep and build sheet definitions
- Demonstrate ingredient knowledge and understanding of culinary trends
- Demonstrate effective communication skills, up and down the organization structure
- Works well with limited oversight, remaining focused on goals and deliverables
- History of developing others into leaders and brand ambassadors, including training experience
- 3+ years of restaurant management experience
- Serve Safe Certified Food Manager
- Software: Google Suite, Meez, Restaurant 365, and Toast
- TABC Certification
